Spring Rolls with Red Rice

Those Ling Ling brand mini spring rolls that I made in late February were quite tasty and just the thing for a quick meal I had to put together tonight. It was a simple dinner of those spring rolls with red rice. I also made a salad and topped it with Ume plum vinegar, olive oil, salt, and pepper.
