Carrot-Zucchini-Tempeh Saute over Thin Rice Noodles, Cold Beluga Lentil Salad, Portabello with Bell Pepper Salad (1904).jpg

This was the first time that i tried gently sauteeing carrots in a main course dish, and it proved tasty and worth doing. It was a nice meal that I could quickly prepare before going out to an American Dance Festival performance.
