Cabbage-potato-seitan saute

I started sauteing some onion and a few minutes later 1/2" or so pieces of chopped Yukon Gold potatoes. Once the potato started getting cooked but was still not brown, I added pieces of seitan (wheat gluten) and chopped cabbage. A few minutes later, I added a little soy sauce and cooked for just a minute or so.

I served this with a herb lettuce mix topped with lilac pepper slices. We bought some yummy fresh lemon sourdough boule, and I put some pesto on a thick slice.
