Spinach-Tempeh Saute, Leftover Basmati Rice and Indian Vegetables
We had leftover rice and roasted eggplant bhagan bhurtha from Sitar Indian Restaurant that we had enjoyed as part of the post-concert dinner on Sunday, as well as some of my Mom's Indian potatoes from the dinner that she had made for my wife, her sitar teacher, and I think one or two of my wife's own students on Saturday. I heated those up and made a tasty side dish by sauteeing tempeh and spinach.
