Cooking class: Mexican

I love to cook and teach vegan cooking. In March 2006, I was inspired by cooking blogs like Vegan Lunchbox to post my dinner plate pictures. I do my family's cooking. Since I met my wife in June 2004, I'm proud that I've not repeated a dinner for her; we weren't together every night, but since fall 2005, we've shared most dinners. I think I can keep up the unique creations through spring 2006 - maybe beyond! (Still going in March'08!)

wow, the quinoa with leeks, guacamole, seitan fajitas, cornbread, potato soup, AND the orange-rice-pudding all sounds (and looks) so scrumptious and fabulous! yum!
Thanks, veggiegirl, for your comment - I'll accept the thanks on behalf of my students :-) !
Wow, for some reason I never thought of pairing citrus with rice pudding, but it seems like such an obviously delicious combination! -Amy@Wheeler's

Thanks for your comment, Ashwini. Sorry that I've fallen behind; I hope to be caught up within a day or so. How are you?

Hi, Amy - I just saw your comment. Boiling the rice in orange juice was just an idea I had 10 years or so ago and it - works great!
That's great about your vegan ice cream! I wish I knew about it in time to promote it at our Thanksgiving raffle (trianglevegsociety.org/thanksgiving07). I'd be glad to collaborate or help in some way. How about hemp vegan ice cream?! Thanks for your comment and your new product! --Dilip
