California Burger with German Zwiebel Schmelz, Hashed Brown Potatoes

Tonight I made a fairly simple dinner. I made hashed brown potatoes with bell peppers and onions. I occasionally make plain hashed brown potatoes for breakfast and like them crispy then. However, when I use my cast-iron pan, as I did today, the potatoes come out soft - still good, but different.

When we were in Germany, we enjoyed Zwergenwiese brand vegan spreads, and brought back their Zwiebel Schmelz ("onion melt"). I prepared (just heated for a short while in very little oil) Amy's brand soy-free California Burger and served it, with the spread, on excellent whole grain bread that we usually get when we shop at the Carrboro Farmer's Market, as my wife did this morning. It may have been simple, but it was a tasty and filling meal!

A simple veggie burger hits the spot some nights! Its my default 'quick' dinner with Trader Joe's sweet potato fries. Glad to see we share a meal in common!

Tonight I am experimenting with some gorgeous and fragrant pea shoots which my Mom picked up for me from the asian market.

Hi Dilip! I missed your post (or it didn't register...I'm not sure which!) on pea shoots. They are refreshing and lovely! I will buy them again and perhaps try some raw recipes. I sauteed the pound or so that I had with a touch of sesame oil and garlic. Simple and fresh! I like volume greens, like pea shoots, spinach, collards--so nutritious. In this day and age of over processed, value-added foods, I like the to return to the natural source and enjoy the vitamins and nutrition that nature serves up.

Not to say convenience foods aren't convenient!

I did take a look! Pea shoot salad looked good. Your post inspired me to try them raw, which is what I am planning for next time I pick some up. Perhaps mixed with watercress and warm marinated tofu! (I'm always in the mood for Asian food! Btw, what's your favorite cuisine?)

Thanks, Puja. Let me know how yoru experimentation with pea shoots goes. I enjoyed them and hope to find them again. I like your idea of mixing with watercress.I don't know what my favorite cuisine is - South Indian maybe (rava masala dosa, idli, various rice dishes, ...), perhaps Italian (a good pizza, tasty pasta, risotto, ...), .... I love good Thai food made with coconut milk, Ethiopian food is tasty with the sour injera bread, I like Southwest and Mexican cuisine like tamales and rice dishes, innovative California cuisine and fusion dishes with fresh vegetables are often interesting ....
