Watermelon Gazpacho with Avocado, Polenta - Seitan- Baby Artichoke Heart Saute (No Added Fat)

We loved the watermelon gazpacho that I put together on Father's Day recently, and I made a variant of it today, including 1/4" chunks of half of an avocado and with other changes, such as not including vinegar. I also made a polenta - seitan - baby artichoke saute since I found baby artichokes on sale. I prepared the artichokes as I explained back in May 2006 but, this time, used my Saladmaster stainless steel-titanium pan with no added fat. Dinner was good!
