Tempeh-Sweet Potato-Squash-Belgian Endive Tumble with Grilled 'Teese' Sandwich
Wow! Yesterday we had a great dinner at Butternut Squash, a new vegetarian and very vegan-friendly restaurant that had just opened the day before near us in Chapel Hill! It's exciting to have them here; the food was excellent and I think reminiscent of another great restaurant in the NC mountains, Laughing Seed.
Today, I made an interesting saute with tempeh, sweet potato chunks, squash, and belgian endive. I also made a vegan cheddar-style Teese (made by Chicago Soydairy) grilled sandwich. It was a very nice meal!
