Missing my friend Bruce Rosar; Falafel Burger, Jerk Corn, and Potato Artichoke Salad Dinner

My wife and daughter had an evening appointment and I checked out an interesting free community American Dance Festival performance at Duke Gardens. It was late when I got home so I put a quick dinner together. I heated Sunshine Burger's new falafel burgers and served it with a dollop of organic hummus and some organic dill pickle slices. I made some corn-off-the-cob and mixed in Volcano Lime Burst, Earth Balance margarine, a little salt, and a little jerk seasoning. Finally, a prepared potato artichoke salad with lemon & leek (potato, artichoke, leek, tomato, canola oil, lemon juice and zest, and spices) that I had purchased at Whole Foods Market completed the meal.



Sadly, a few hours earlier, I had received a grim phone call that a good long-time friend of mine, Bruce Rosar, was killed yesterday in a cycling accident. No matter whether we die as newborns or live to a century or beyond, or anywhere in between, one can hope that she/he will have left the world better for their having lived. Bruce was an avid cyclist who taught courses on Effective Cycling and safety (I took his course at least ten years ago), and served on various bicycle advocacy groups, locally as well as nationally, including being on the board of the League of American Bicyclists. Bruce did much to advance causes of safe cycling and respect for cyclists, but his life was tragically cut short. I miss him terribly.

I am so sorry about your friend...i've lost several friends over the years, its heartbreaking...

Thanks, Carla - we're lucky to have them as our friends! It was good meeting you, though I wish the circumstances were very different! Do stay in touch.
