Red Curry Stew with Brown Basmati Rice, Chickpea, Red Kale, and Sea Bean

This would be a no-added-fat meal, but for the significant half avocado, contributing about 12-15g of fat. The dinner came out well!

The long grain basmati rice looks very yummy! I'm going to try cooking it, but I guess it won't be that beautiful!
