Brown Rice Capellini with Vodka Sauce, Vegan Apple-Sage Sausage

I made a nice dinner with tempeh, fingerling potatoes, and spinach as the main dish and Madagascar pink rice, but my wife was still jet lagged and didn't want dinner. I decided to save it and heat it hopefully tomorrow for our family, and instead for just me, made a simple Jovial brand brown rice capellini pasta with Vodka sauce and apple-sage vegan sausage. Easy but tasty and filling!

Vegan Vodka Sauce over Brown Rice Capellini Pasta with Lemon Pepper Tempeh

Earthfare sells a tasty vegan vodka sauce; I served it for tonight's dinner atop brown rice capellini pasta, along with lemon pepper tempeh strips. This is going to be my last dinner without my wife and daughter for the year; they have been in India. They left on December 1st and return on the 26th; I'm enjoying a Christmas Eve dinner with friends tomorrow. Merry Christmas - I can't wait to have my family back!

Broccoli with Seitan served with Noodles

I made a simple dinner today; I sauteed half of a box of seitan strips, along with four cloves of garlic thickly sliced.  When the seitan was starting to brown, I added about a third of a cup of broccoli florets and a little bit of jalapeno. A few minutes later, with the seitan lightly brown and the broccoli deeper green, I added just a touch, maybe a tablespoonful, of roughly chopped onion. I served after a minute or two longer of cooking, along with half of a package of ramen noodles and coconut aminos.
